からすみ, 安平麩, 麩, ふ Roe, Hitoshi Yasushi fu, fu, fu

カラスミ（鱲子）は、ボラなどの卵巣を塩漬けし、塩抜き後、天日干しで乾燥させたもの。日本ではボラを用いた長崎県産のものが有名だが、香川県ではサワラを用いる。日本以外でも台湾やイタリアのサルデーニャ島、スペイン、エジプトでも作られる。ヨーロッパでは他の海水魚の卵巣も用いられる。

【からすみの語源・由来】

からすみは、中国から渡来した墨「唐墨（からすみ）」に形が似ていたことからの命名。
昔は冷蔵技術がなく、常温保存されていたため、時間が経つと色が黒くなり、形だけではなく色も唐墨に似ていたといわれる。
一説には、肥前名護屋城にいた豊臣秀吉に土地の代官がこの食品を献上した際、その名を尋ねられ、とっさに「唐墨です」と答えたため「からすみ」になったともいう。
江戸時代、三河のこのわた・越前のウニとともに、長崎のからすみは「天下の三珍味」といわれた。Read more
